Missouri Peach Cobbler              

Pre-heat oven to 475 degrees

8-10 cups sliced peaches

1 cup sugar

3-4 tablespoons flour or 1/4 cup dry tapioca

1/2 teaspoon nutmeg,

2 teaspoons lemon juice

1 1/2 teaspoons vanilla

1/6 cup butter or margarine

Directions for making the cobbler:

Combine peaches, sugar, flour ( or tapioca) and nutmeg in large pot; set aside about 10 minutes.  Bring peach mixture to a boil; reduce heat to low, simmer 10 minutes or until peaches are tender.  Remove from heat and stir in vanilla, lemon juice and margarine.

Spray a 2 quart baking dish with Pam, or rub with margarine.  Spoon half of the peach mixture into dish.  Top with 1 pastry, then bake for 12 minutes or until lightly browned.  Spoon the remaining peach mixture over baked pastry.

Cut remaining pastry into 1 inch strips; arrange in lattice design over peaches.  Bake an additional 15-20 minutes until browned.  Allow to cool slightly before serving.  Serve with vanilla ice cream.
