Peach Butter

8 cups mashed peaches

3 cups sugar

3 tablespoons lemon juice

Cook over medium-high heat. Foam will form, Stir foam down. Keep an eye on the mixture and turn down the heat a little if necessary. Start stirring constantly when it boils, and continue for about 10 minutes.   Place in hot, prepared canning jars and seal. (See Jams and Freezing page located in 'Recipes' for further instructions on preparing jars)  Contributed by Steve Ruby
